OATMEAL - APPLE MUFFINS

If my girl could blow out a candle on a birthday cake everyday, she would! She just loves it, she is also really interested in learning "Las maƱanitas" (the beautiful song you will listen at a mexican birthday party) so that is enough excuse for me to bake something. We made some oatmeal muffins, inspired by a really easy recipe from my mother in law changing it slightly.

INGREDIENTS:
1 cup whole wheat flour
1 cup oats (I used quick so my kids can even notice them - you know, sometimes they can be picky)
1/3 cup ground flaxseed
3/4 cup margarine 
1 cup light brown sugar
1 teaspoon baking powder
1 teaspoon vanilla
3 eggs
4 oz applesauce (this time I used applesauce because we made them at night, so it was faster this way, but grated apple it's even better)


Mix flour, oats, flaxseed and baking powder. Reserve.
Cream margarine and sugar, add eggs, vanilla and applesauce. Incorporate the dry ingredients and mix. Of course, they asked for chocolate chips, so that's optional. Fill the muffins cups. Bake at 350° F for approximately 25 minutes or until they are golden brown. Cool and serve. Place a candle on top, and start singing!
